A pan-healthy Italian sausage and vegetable.

My toddler goes to preschool twice a week, and when he comes home, he is very cha cha on their day.
He talked a lot about his friends, especially a girlfriend. He told me she was “very nice” and “liked to play with her on the train”. She was added to the discussion about our family, yes, my child even sometimes prayed for her.

All his favorite vegetables and his favorite meat sausage. He likes Turkey sausage – it’s actually the only thing I can eat. And he stole the broccoli from my plate, and he loved it.
This dish is fast and easy to cook, and the vegetarian preparation is quick! You can easily customize this dish by adding your favorite vegetables. You can also use your favorite sausage. We did this with Italian chicken sausage and we love it. If you can’t find Italian sausages, then plain Turkey sausages are great for all spices.
ingredients
2 big carrots ~ 2 cups.
2 red potatoes to 2 cups.
1 small medium squash ~2 and 1/3 cup.
2 red peppers to 2 cups.
1 head of broccoli ~ 1 and 1/2 cup.
16 ounces smoked Turkey or chicken sausage.
seasoning
1/2 tablespoon each: dried basil, dried oregano, dried parsley, garlic powder.
1/2 teaspoon EACH: onion powder, dried thyme.
1/8 teaspoon red pepper flakes optional.
1/3 cup of Parmesan cheese is freshly ground, optional.
4 and 1/2 tablespoons olive oil.
Optional: fresh coriander, salt and pepper.

Preheat oven to 400 degrees f. Use a large board or foil (easy to clean) and put it aside.
Prepare vegetables: * it is important to prepare the vegetables according to the direction to make sure they are cooking at the same time.
Peel and thinly slice. Wash and (we love to peel) the red potatoes if necessary. You want to be very small here. (I cut the potatoes in half and cut them into 10-12 pieces.)
Cut the zucchini in half, then cut * thick * zucchini COINS. Chop up broccoli. Remove stems and seeds from chilies and cut into medium sized pieces. Cut the sausage into thick COINS.
Put all the vegetables and sausages on the pan.
If necessary, add all the seasonings and salt and pepper to a small bowl (I use about 1/8 teaspoon of pepper and 1/2 teaspoon salt) and olive oil. Stir and mix.
Toss the seasonings and oil mixture on the vegetables and the sausage.
Place in a heated oven for 15 minutes. Remove and stir-fry the vegetables and sausage, then return to the oven for 10-20 minutes, or until the vegetables are crisp and tender.
If necessary, remove and top the freshly grated Parmesan cheese and fresh parsley.
Eat it in front of rice or quinoa if desired.
