Cover the sheet with aluminum foil (2 sheets may be required) and tightly wrap it around the edge to seal. Bake until the rice is soft and the water evaporates for 35 to 40 minutes. Remove the pan from the oven and set aside.
Mix the remaining 1/4 cup oil with orange juice, rice vinegar and the remaining 1/4 teaspoon salt in a small bowl. Prepare 2 TBSPS of rice. Add the mint and dry the mixture with a fork.
